Lemon Cake that Jeremy likes

When I was in high school in Ketchikan, Alaska, I had a girlfriend, Jill. Her mother, Rita Spoelstra, made this awesome Lemon Cake. I liked it so much my mom asked her for the recipe. Well, I am at my mom’s right now, and I came across this recipe, and thought I would share it with all my closest friends :-) (incidentally, this is also a test of my mobile scanner and photoshopping skills)

Here is what the recipe card says:

Recipe for: Lemon Cake that Jeremy likes
From: Rita Spoelstra

1 lemon cake mix
1 cup water
3 eggs
3 oz. pkg. lemon jello
1/2 cup oil

Mix all together and bake 40 minutes at 350°. Frost immediately when taken from oven with glaze made of powdered sugar and lemon juice.

  • I believe the author of this recipe died over 100 years ago. (not the author of the recipe card, but the recipe itself)

    Also jointly released with the "my daughter and you dated for two years" license :-)
